What exactly survives when DOC becomes MARKDOWN?

The words, and nothing else. MARKDOWN stores characters and line breaks, so bold, italics, headings, fonts, colours, tables, images, headers and footers are all discarded — not degraded, removed. That is the correct outcome when you want the text for indexing, diffing or scripting, and the wrong one if the formatting carried meaning. The long form is what Jekyll, Hugo and several documentation pipelines look for by default, so it fits straight into those builds. It inherits every Markdown ambiguity — dialect differences around tables, footnotes and raw HTML — with no benefit over .md.
Is the older binary Office format still a safe bet?

It opens everywhere, but it is a compatibility choice rather than a good one. The binary formats predate the XML packages, carry macro payloads that many mail servers strip on sight, and are being steadily deprecated by Microsoft itself. Use them when a specific piece of old software demands them, and the XML format otherwise.
Will the MARKDOWN open directly in a browser?

Yes, and the DOC would not have. Browsers ship a decoder for MARKDOWN and none for DOC, so a DOC link forces a download while a MARKDOWN renders inline. That is usually the deciding factor when the file is going onto a web page rather than into an application.
Is there a file-size limit when converting DOC to MARKDOWN?

Free conversions have a size limit per file, set by the type of file, and the page tells you when a file is over it. A paid plan removes that limit, so much larger files can be converted.
