Cleanly, yes, but check what is inside first. A rip usually carries more than the picture — often several audio languages, sometimes a subtitle track or chapter marks — and whether those survive depends entirely on what the AVI can hold, not on the rip. The other thing to know is that the encode already happened: the ripper chose a bitrate years ago and no conversion can recover detail it discarded, so if the discs are still around, re-ripping beats re-encoding. MKV is Matroska, an open container designed in 2002 with no licensing restrictions and no ceiling on what it can hold.
It is downmixed to stereo, because AVI has no dependable multichannel path. The fold-down uses the standard ITU coefficients so dialogue in the centre channel stays intelligible and the surrounds come in at reduced level rather than vanishing. Anything that relied on discrete channel placement is gone after that.
Because a lot of hardware never learned anything newer and never will. DVD players, in-car head units, camcorder playback modes, industrial displays and plenty of broadcast ingest equipment accept AVI and nothing else. The conversion is a deliberate step down in efficiency, bought in exchange for working on a device that has no other option. AVI is trivially simple, which is exactly why ancient camcorders, capture cards, DVD ripping tools and Windows-era software all still emit it.
