Will the page layout of my PDF survive the XLS conversion?

Block-level layout (headings, paragraphs, lists, tables, inline images) is reconstructed from the PDF's text and positioning. Highly designed PDFs with overlapping or rotated elements may flow differently in XLS, which is a fundamentally re-flowable format.
Is the text in my PDF selectable in the XLS?

Yes — extracted text is fully selectable and editable in XLS. Scanned PDFs (image-only) need OCR first; enable the OCR option in the converter settings for those.
Will the XLS be properly editable?

Yes — that is the point of converting out of PDF. The output opens as a real document with live paragraphs, styles and tables rather than a frozen page image, so you can edit it directly instead of retyping. Heavily designed source layouts convert less cleanly than plain prose, so expect to tidy spacing on anything built on a complex grid. XLS is still what a great deal of legacy financial and government reporting tooling emits and expects.
Is the older binary Office format still a safe bet?

It opens everywhere, but it is a compatibility choice rather than a good one. The binary formats predate the XML packages, carry macro payloads that many mail servers strip on sight, and are being steadily deprecated by Microsoft itself. Use them when a specific piece of old software demands them, and the XML format otherwise. XLS caps out at 65,536 rows and 256 columns, and its macro payloads make it a recurring security problem.
What if the source is a scan with no real text in it?

Then the conversion produces a picture of the text rather than the text itself, and searching it finds nothing. Run /pdf-ocr/ to add a recognised text layer first; optical character recognition turns the scanned pixels into selectable, searchable characters that the conversion can then carry through properly.
Is there a file-size limit when converting PDF to XLS?

Anonymous uploads are capped at a generous default; signed-in free accounts get a higher cap, and Pro accounts have no per-file limit. Browser memory is usually the practical constraint long before our server-side limits kick in.
Can I batch-convert several PDF files to XLS at once?
