Each JPEG image becomes one PDF page sized to the image dimensions. If you upload multiple JPEG files they are stitched in upload order. For mixed-size sources pick a fixed page size in the options or pages will vary.
Neither JPEG nor PDF carries an alpha channel, so the background renders as a solid colour and pixel colour data is preserved end-to-end.
You can convert the PDF back to JPEG on this site. If either format involved is lossy, the round-trip is not bit-perfect even though it is visually or audibly close.
Default settings target broadcast / web quality — visually identical to the source for most viewers. For archival use, pick the highest quality option in the converter settings.
Then the conversion produces a picture of the text rather than the text itself, and searching it finds nothing. Run /pdf-ocr/ to add a recognised text layer first; optical character recognition turns the scanned pixels into selectable, searchable characters that the conversion can then carry through properly.
EXIF travels with the embedded image data, which means GPS coordinates can end up inside a document you intend to publish. Use the strip-metadata option during conversion if the PDF is going anywhere public — once it is embedded it is no longer obvious that it is there.
It depends entirely on whether real text is present. A PDF generated from a document carries an actual text layer and is searchable; a PDF built from scans or images is a picture of text and is not, until OCR adds a layer. /pdf-ocr/ does that, and it is worth running before any conversion that expects to read the words.
